This weeks Blendtec recipe of the week is a delicious Thai Ginger Soup can be made in your Blendtec in 3 minutes, perfect for a starter or a quick lunch!

Ingredients

250ml water
1/2 large carrot
1/4 large courgette
2 x spring onions, chopped
1/4 sliced white cabbage
1/4 bell pepper with the seeds and stem intact
1 cup unsalted cashew nuts
1 x Knorr Vegetable stock cube
1 teaspoon of runny honey
1/2 garlic clove
1 small chunk of ginger with the skin on
1 small green chilli

Method

Combine the ingredients into your Blendtec and blend on the soups setting for 3 minutes. Serve and enjoy with fresh bread rolls of your choice.
